Lemon Loaf Cake Slice

I was not prepared for how good this lemon loaf cake would turn out. It’s soft, buttery, and tangy, with a lemon syrup soaked into the warm cake and a lemon glaze poured over the top. It’s the kind of loaf that makes your whole kitchen smell like a bakery, and honestly, that smell alone is worth making it for. The best part is how easy it actually is! Grab your lemons and let’s bake!

Why You’ll Love This Lemon Loaf Recipe

  • Big lemon flavor in every layer. Zest rubbed into the sugar, fresh lemon juice in the batter, a lemon syrup soaked into the warm cake, and a lemon glaze on top. It’s lemon on lemon on lemon.
  • Soft, tender crumb that stays moist for days. Yogurt does the heavy lifting here, no dry, crumbly loaf situation happening.
  • That syrup soak is the real secret. It’s what takes this from a good lemon cake to a genuinely memorable one, and it’s the trick that made me fall in love with this recipe in the first place.
  • One bowl, no mixer, no fuss. Whisk, mix, pour, bake. That’s it.

What You’ll Need

Zest of 2 lemons: Rub this into your sugar before anything else goes into the bowl. It releases all the natural oils in the zest and gives you way more lemon flavor than just tossing it in at the end.

200g white sugar (1 cup) For sweetness and moisture.

115g melted butter (½ cup) Gives the loaf its rich, buttery flavor.

2 large eggs For structure and richness.

1 tsp vanilla extract optional but recommended.

2 tbsp lemon juice Fresh squeezed is best here for real lemon flavor.

110g plain yogurt (½ cup) This is what keeps the crumb soft and tender instead of dry. Sour cream also works if that’s what you have on hand.

1 tbsp milk Just loosens the batter slightly. If you don’t have milk, skip it and add an extra tablespoon of yogurt instead.

180g all-purpose flour (1½ cups) For the structure of the loaf cake.

½ tsp salt Balances the sweetness and deepens the flavor.

2 tsp baking powder Helps the lemon loaf rise to create a soft and tender texture.  Check that yours isn’t expired, old baking powder is the number one reason loaves come out flat.

65g icing sugar (½ cup): Icing sugar or powdered sugar is used create the lemon glaze

How to Store Lemon Loaf Cake

  • Room temperature: Store in an airtight container for up to 3 days. If a slice starts to feel a little firm, 10 seconds in the microwave helps to soften it again.
  • Freeze the baked loaf: Slice the fully cooled loaf cake and wrap each piece tightly, you can freeze for up to 1 month. Thaw at room temp or warm gently in the toaster oven when you’re ready.
  • Either way, this loaf holds up beautifully in the freezer, so don’t feel like you have to eat the whole thing in one sitting (unless you want to, no judgment here).

Frequently Asked Questions

Can I use bottled lemon juice? Freshly squeezed lemon juice is best for real lemon flavor.

Can I use sour cream instead of yogurt? Yes, swap it in equal amounts. It’ll turn out just as soft.

Why did my loaf come out dense or gummy? Most likely too much flour or too much liquid. Make sure you’re to measure everything accurately (a scale helps). If you don’t have a scale, make sure to spoon flour into the measuring cup and level it off, not scoop straight from the bag.

Can I skip the syrup step? You can, but the syrup is what keeps the loaf so moist and boosts the lemon flavor.

Can I add blueberries or other mix ins? Definitely. Toss them in a little flour first so they don’t sink to the bottom while baking.

Do I need to let the loaf cool before glazing? I would say yes if you want it to look pretty. If it’s a little warm, the glaze will melt right off instead of setting. But if you don’t mind, there’s no need to wait really.

Can I bake this in a different pan? A standard loaf pan works best for the timing here. If you use a different size, just watch for a clean toothpick instead of relying on the exact bake time.

Ingredients

Lemon Loaf

  • 200 g white sugar 1 cup
  • Zest of 2 lemons
  • 115 g melted butter ½ cup
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 tbsp lemon juice
  • 110 g plain yogurt ½ cup
  • 1 tbsp milk
  • 180 g all-purpose flour 1½ cups
  • ½ tsp salt
  • 2 tsp baking powder

Lemon Syrup

  • 100 g white sugar ½ cup
  • 2 tbsp lemon juice
  • 2 tbsp water

Lemon Glaze

  • 65 g icing sugar ½ cup
  • 1 tbsp lemon juice
  • 1 tbsp milk

Instructions

  • Prep the pan. Preheat oven to 180°C (350°F). Then grease and line a loaf pan (8×4 or 9×5 inch).
  • Rub the zest into the sugar. In a large bowl, rub the lemon zest into the sugar with your fingers for about a minute until it looks damp and smells fragrant.
  • Whisk in the wet ingredients. Add the melted butter, eggs, vanilla, lemon juice, yogurt, and milk. Whisk until smooth.
  • Add the dry ingredients. Add the flour, baking powder, and salt directly into the bowl. Mix gently just until combined, the batter should look thick and smooth with no dry streaks.
  • Bake. Pour batter into the prepared pan and bake 38 to 40 minutes for an 8×4 pan, or 30to 35 minutes for a 9×5 pan, or until a toothpick comes out clean. (I used an 8×4 pan for this recipe for a taller loaf cake).
  • Make the syrup. While the loaf bakes, combine the syrup ingredients in a bowl and microwave 40-60 seconds, or heat gently in a small pot until the sugar dissolves.
  • Soak it while it's hot. Pour the warm syrup over the loaf immediately after it comes out of the oven. Let it soak in as the loaf cools in the pan, this is what keeps it so moist.
  • Glaze. Whisk the glaze ingredients together and drizzle over the top.
  • Slice and enjoy!

Notes

  • Rubbing the zest in the sugar is super importanly. It’s what pulls the most lemon flavor out of the peel.
  • Pour the syrup while the loaf is hot, it soaks in far better than if you wait for it to cool.
